Three roasts, rotating with the harvest.

Each lot is tasted and dialed in before it reaches the bag. When a coffee runs out, it's gone until next season.

We buy small lots directly from farms and trusted importers, paying above market for quality.

Every lot is cupped on a 50g sample roaster until we know exactly how it wants to be developed.

Beans hit the drum the morning your order ships — never weeks ahead, never from a warehouse.

Rest & ship

We let the coffee degas, bag it with a one-way valve, and send it out the same week.

Halcyon started in 2014 with a 1kg roaster in a borrowed garage. A decade on we're still small on purpose — roasting only what we can taste, sell, and stand behind.
